Our Mo'olelo
Executive Chef and Owner, Mark, is alumni of Johnson  & Whales Culinary Arts School.  He completed his culinary internships in Denver, Colorado and Osaka, Japan. Through travels, he has opened up many successful businesses across the mainland: California, Iowa, Nevada, Colorado, Florida, New Mexico, and Minnesota.   One of his culinary highlights was being a personal chef to several players on the Denver Broncos during the 2009-2013 NFL season, (even though he's a die hard Oakland Fan!).
 
Upon his return home to Hawai'i, Chef Mark was inspired to create a locally based nutritional caterering & personal chef company that used the freshest locally grown products, straight from the 'aina/farm to the customers table.  Farm to Table 808 was established on January 1st, 2014. "Farm. Fish. Hunt. Cook" is his mantra.  He specializes in Sports Nutrition  to meet diverse dietary needs, catering all kine size events (parties, fundraisers, and weddings) and personal chef services. 

​Chef Mark has also helped open and consult for many local restaurants including: Genius Lounge, The Mix, Arm Bar, Square Barrels, Monkey Pod, and The Crown to name a few. Other accolades include:

2003- Taste of Colorado-Best Green Chili-Denver, Colorado
2007- Westword News-Hawaiian Chef brings “Aloha to Mile High Stadium”- Denver, Colorado
2009- Coors Field- Silver Bullet Award, Best Original Burger-Denver, Colorado

Our Kuleana 
Growing up as a keiki in Aiea, Chef Mark was influenced by his fisherman and popular local Hawaiian musician pops Andy Llanos. His mother instilled his hard work ethic which still motivates him today.  Many of his family members grew up in the Plantation Era and worked on Kahuku Farms and Kahuku Sugar Mill.  As he grew older, he kept his family's roots close, developing a deep passion for Hawaiian history, culture, and it's future.
